This Week's Meals



Shopping List

Meats
  • 3-5 lb Boneless Skinless Chicken Breasts - I bought 3 packages - each 1-1.5 lbs - Aldi - $2.69/lb
Produce
  • 1/2 Small Onion 
  • 4 Cloves Garlic - minced (I used jar garlic)
  • 1 tbsp. Chopped Parsley - HyVee 
  • Bunch of Spinach- Bagged (had on hand)
  • 8 oz Fresh Mushrooms - Aldi
  • 1lb Fresh Green Beans - Aldi
  • 1 lb Asparagus - Aldi
  • 2 T Green Onion
  • 2 medium-sized Zucchini - Aldi
  • 2 medium-sized Yellow Squash - Aldi
  • Pint Strawberries - Aldi - $1.25
  • Pint Blueberries - Aldi - $1.25 
  • 1 (16-oz.) bag Frozen Peaches (Had in freezer)

Spices
  • 3 tsp Dried Basil
  • 1/2 tsp Dried Oregano
  • 1 tsp Dried Thyme
  • Salt
  • Black Pepper
  • 3/4 tsp. Garlic Powder
Dairy
  • 1 Cup finely grated Parmesan Cheese
  • 1 3/4 cup milk (I used 1%)  
  • 3 oz Neufchatel Cheese (aka light cream cheese) - Aldi
  • 1 Can Evaporated Milk 
  • 1/2 cup + 1/2 cup low-fat white cheese (I used Pizza Cheese) - HyVee
  • 8 Tbsp. butter
  • 1/2 C. butter  
  • 1 1/4 Cup Whipping Cream
  • Plain Greek Yogurt 
  • 1/2 cup Plain Yogurt 

Grains
  • 12 oz Penne Pasta  
  • Granola - Aldi - $1.99

Misc.

  • 1 1/2 cups White Wine
  • 3 Tablespoon Olive Oil
  • 1 Tablespoon Balsamic Vinegar
  • 2 Cups Flour
  • 4 - 5 slices bacon, cooked and crumbled into small pieces (optional)
  • 1 can Cream of Chicken Soup 
  • 3 Tablespoons agave nectar or honey (Had on Hand)
  •  1 Tablespoon Fresh Lemon Juice (Had on Hand)

Breakfasts
- At the beginning of the week, I prepared 5 mason jar fruit and yogurt parfaits. I purchased a large container (I think 24 oz) of plain Greek Yogurt.  In each mason jar, I layered a large spoonful of yogurt with a handful of berries - yogurt, strawberries, yogurt, blueberries, yogurt.
-I also divided the granola into small tupperware containers and kept them in the pantry.  Each morning, grab one mason jar, one container of granola, and you have a parfait on the go.

Lunches
-Leftovers of dinner meals
-Salads prepared with spinach, kale, blue or feta cheese, strawberries, blueberries, extra cooked chicken, and light vinaigrette dressing.
